Lemon Delite

This recipe was given to me by Tita Betty, my best friend's mom - you know who you are, Sar - or you'd better! Anyway, she is one of the best cooks I know ... Tita Betty, I mean. Definitely not Sarah! I'm going to try to get her recipe for the Vegetable Eggrolls and Baklava.

LEMON DELITE


Crust
1 stick butter
1 cup flour
½ cup walnuts, chopped fine

Bake at 370 for 20 minutes or golden brown.

First Layer
2 bars cream cheese
1 ½ cup confectioner sugar
2 T vanilla
Cool Whip

Second Layer
Lemon pudding
2 bars cream cheese
Small crushed pineapple

Top Layer
Cool Whip and chopped walnuts
